(Pink) Dinner is Served: RECIPE ALERT

Jon's family has the tradition of Pink Dinner on Valentine's Day, and we decided to carry it on, so (since last year we were out of town on Valentine's Day) this year was my first making the Pink Dinner. As far as I know, the only rules are that every thing possible has to be pink. I wanted to make it somewhat authentic (i.e. the less food coloring involved, the better), so this is what I came up with (ps All these recipes are original Sarah Leininger recipes, because I hate following other people's recipes)...

Cranberry, Apple, Walnut salad with Raspberry Pecan Dressing
-chopped romaine lettuce
-1/2 a Pink Lady apple, chopped into small pieces
-1/2 cup Craisins
-1/2 cup walnuts, coarsly chopped
-1 green onion, chopped (only the milder green part)
-1/2 cup raspberry pecan dressing (I used Ken's)
*Toss all ingredients together. Yum.

Pink Rolls
-I just made a regular roll recipe, with white flour, and for this one I did cave and add a few drops of red food coloring...I rolled them onto crescents and they came out a lovely pink color.

Bow Ties in Pink Sauce with Sweet Italian Sausage
-half a pound of bow tie pasta, cooked until al dente
-two sweet Italian sausages, chopped into pieces and browned
-1/2 cup chopped sweet red pepper
-1/2 cup chopped onion
-1 cup tomato sauce
-1/2 pkg. cream cheese
-1/4 cup sour cream
-basil to taste
*brown Italian sausage, and add pepper and onion to pan. Cook until tender. Add tomato sauce, cream cheese and basil. Stir until well blended. Add sour cream, and stir. Toss with cooked pasta. (To be completely honest, this sauce turned out a little more orange than pink, but in theory it should be pink...hmm.)

Pink Pear Tart
-One pie crust (I bought the kind that are rolled up from the refrigerated section...I was going to make one from scratch, but I have an 8 month old, and the rest of the meal to make, so I opted for the easy route...plus, a good pie crust is hard to pull off...if you buy it from the store, it's no fail every time)
-1 can sliced pears, drained
-1/2 stick butter, softened
-1/2 cup brown sugar
-1/4 cup slivered almonds, chopped
-cinnamon
-1/2 tsp vanilla
-granulated sugar
-cream, milk, or egg whites (for brushing crust)
*Place pie crust on a cookie sheet (no need to grease). In a small bowl, combine butter, almonds, and brown sugar. Spread onto pie crust, leaving room on the edges to fold over later (I spread mine in a heart shape, since it was Valentine's Day). In another bowl, toss drained pears, vanilla, and cinnamon to taste (I also added a couple drops of red food coloring to obey the pink rule). Arrange the pears on top of the almond mixture. The entire area should be covered in a single layer of pears. Fold edges of crust over and pinch lightly to seal. Brush edges of crust with cream (or milk, or egg whites) and sprinkle lightly with granulated sugar. Bake 30 minutes at 350 f, or until crust is golden brown.

This dessert turned out FANTASTIC!!!! I think it is the best dessert I have ever invented. Seriously, delicious. I was kind of shocked. It was SO easy, made from ingredients you can find at any grocery store, and looked kind of fancy. I will definitely be making this again, and you should definitely try it.

Pink dinner was a success. Everything was good. I can't wait for next year! And in the mean time, I'll be making all of these things (except, maybe, the pink rolls) again! Happy Valentine's Day everyone!



Dinner. (Also pictured: chocolate raspberry truffles from Martha Stewart Living: 8 oz bittersweet chocolate, chopped, 1/2 cup heavy cream, 1 teaspoon raspberry extract (this calls for a Grand Marnier liqueur, which is apparently orange flavored...I opted for the non-alcoholic raspberry flavoring), 1/4 teaspoon coarse salt, unsweetened cocoa powder , for rolling. 1. Place chocolate in a bowl. Bring cream, raspberry extract, and salt to a simmer in a small saucepan. Pour over chocolate and let stand for 2 minutes. Whisk until smooth. 2. Pour chocolate mixture into 8-inch square baking dish, and refrigerate until chilled, about 30 minutes. 3. Scoop balls of chocolate mixture using a tablespoon or a 1-inch ice cream scoop. Roll balls in cocoa powder, tossing until fully coated. Shake off excess.)Olivia in on the pink action, enjoying apples with blackberries for dinner.

I might have solved it!

For the past two months, my sweet little perfect sleeper has been really struggling to sleep! She's been taking 15 minute naps and waking up several times each night. When she was only three weeks old, she refused to be swaddled anymore...she would wiggle and scream until she got out. But recently I have noticed that while she often wakes up from a nap after 10 minutes when in her crib, she will sleep for two hours in my arms. While sleeping in my arms every time she sleeps is not an option, I decided to try swaddling again. I wrap her up after she falls asleep and is in her crib, and she has been doing great! Today, she took two naps, over an hour each, and tonight she's been sleeping solidly since I put her down. Everyone keep your fingers crossed that this has, indeed, solved our little problem!

Mom Scare

I had my first big mom scare today. I was sitting on the floor next to Olivia while she rolled, scooted, and played. She was on her back when she suddenly started choking, face turning red, etc. I picked her up and started patting her back, thinking she had probably taken a bite of the magazine nearby. When she kept choking, I stuck my finger in her mouth to see if anything was in there, and felt something. I assumed it was paper, but when I pulled it out, it was a huge staple. She gagged and threw up a little bit in my hand, and we went into the bathroom where I swiped out her mouth again to make sure there was nothing else in there. Thankfully she was fine, but it scared me to death! I think it was a staple that had fallen out of the bottom of our couch, but I really have no idea how she got it in her mouth. I am SO glad I was able to get it out before she really choked, or swallowed it! I try so hard to keep anything dangerous away from her, and somehow she found the one dangerous thing I had no idea was even there. So thankful she's okay.

Hello from Snowy Baltimore

Olivia wanted me to send a shout out to all of you from our winter wonderland. We are up to our waists in snow, but today the sun is shining, we're shoveling out, and life is good. Liv didn't even hate the snow as much as she did back in December, so we had fun with that. We are feeling extremely grateful that we didn't lose power, like so many in our area did. We have basically managed to just have fun being snowed in together. Jon has been able to work from home to avoid the nasty roads, and we have loved having him around. Here are a few more photos of our snowy fun...

Not a Photographer

I really do not consider myself a photographer in any way, shape or form, but I DO appreciate great pictures. Unfortunately, most of the ones I take don't turn out looking any better than your typical snap shot. I take them anyway, mostly to record history. But this morning, the light was coming through the window, reflecting off the snow, and Olivia was looking so cute in her February love outfit that I started snapping away, and this happened...

13 going on 30

Liz was my best friend when I was 13, living in Brazil, and trying to figure things out. We haven't seen each other forever, so when she and her little family recently moved to DC, I jumped on the chance to see her. They came over for dinner last night, and it was a blast to catch up, meet her husband Michael, and her sweet baby, Henry. In many ways, it was like old times, and in many others...it was nothing like old times. After all, we are now adults, married women, in fact, with babies for crying out loud. And we are dangerously nearing...(eek!) thirty!

Here's to how far we've come!

Kitchen Makeover

When we were madly dashing to get our house painted before Olivia was born, I wanted to paint the kitchen red. I bought paint, put it on the wall, and hated it. So, I painted the kitchen green instead. Turns out the green never inspired me. I never got around to decorating. And I eventually decided that I did in fact, want a red kitchen. I just had to be more careful when choosing which red. So here you have it...my most recent kitchen makeover...

Clearly, the red inspired me a bit more than the green did. The last thing I am thinking about doing is painting the wood trim on the cabinets cream to match the rest of them (the cream part is laminate, and un-paintable) and then maybe adding black handles...what so you think? I was planning on painting them for sure, but once the kitchen was red, I didn't hate the cabinets as much. Opinions, please!!
